Sweet Potato French Toast
4 oz. Jack’s Harvest Lip-Smacking Sweet Potatoes (thawed)
4 eggs
2 tablespoons milk
1 teaspoon vanilla
1 teaspoon cinnamon
dash salt
5 slices whole wheat bread
1 tablespoon butter
Whisk together top five ingredients in a wide mouthed bowl or Pyrex dish. Add half the butter to a saute pan and melt on medium. Dip the bread in the egg mixture on both sides, add to pan and cook until lightly browned, flip and brown other side. Serve with maple syrup and fresh berries. Hint: Jack likes it when I slice into sticks. |
